Our veal originates from female or male animals that are five to eight months old at the most. It is fine-grain and low-fat and therefore easily digestible. High-quality pink to red Swiss veal is tender and juicy, and is characterised by its unique flavour. Cuts from the forearm are ideally suited for braising, while cuts from the hock are suitable for frying.
